kentucky hot browns




This is such an easy party meal- you can make the sandwiches in advance and just stick them in the broiler right before dinner. It is also pretty thrifty for a big crowd- you are essentially serving lunch meat for dinner. Don't be fooled by that though- they make an elegant presentation and are quite filling- one was plenty for me.

Kentucky Hot Browns

  • 4 pieces of toast
  • 12 pieces of smoked turkey
  • 8 tomato slices
  • 8 slices bacon
  • cheddar cheese bechamel sauce
  • parmesan cheese
  • salt and pepper

Place toast in the bottom of an oven proof baking dish. Top with turkey, then tomato slices, then bacon. Top each sandwich with cheese sauce. Sprinkle with salt, pepper and parmesan cheese. Put under the broiler until heated through, browned and bubbly.

Cheddar Cheese Bechamel

  • 2 tlbs tbs
  • 1/4 cup flour
  • 1 1/2 cup milk (I use non-fat lactaid)
  • 1 tsp dijon mustard
  • cheddar cheese (to taste- I use about half a block)

Melt butter. Add flour and stir until absorbed. Add milk in three additions and stir until smooth. Add mustard and stir to combine. Add cheese and allow to melt.
