My vegetable lust always kicks in about this time of year. As much as I love stews and slow cooked winter things I start needing vegetables and crunchy salads. This is green apples, fennel, endive, and cabbage just lightly tossed in my usual vinaigrette. It did the trick. Crunchy, vegetable-y and spring green.

winter salad
My vegetable lust always kicks in about this time of year. As much as I love stews and slow cooked winter things I start needing vegetables and crunchy salads. This is green apples, fennel, endive, and cabbage just lightly tossed in my usual vinaigrette. It did the trick. Crunchy, vegetable-y and spring green.
